Ricotta Toast with tomato, bacon and caramelized onion
Ingredients:
Peasant bread slices
1 cup Ricotta Cheese
3 tablespoons Fraïse Tomato Jam©
1 medium onion
300 g bacon (well toasted)
100g Cherry Tomatoes
Salt, pepper and broken chile to taste.
Dried chives to decorate

Rebanadas de pan campesino
1 taza de Queso Ricotta
3 cdas de Mermelada de Tomate Fraïse©
1 Cebolla mediana
300 g de tocino (bien tostado)
100g Tomatitos Cherry
Sal, pimienta y chile quebrado al gusto.

Brown the bacon until it is very crispy, this is the secret to making this recipe spectacular. *Tip: We toast it in the oven at 350°F for 15 mins.*
Cut the onion into strips.
Add the halved cherry tomatoes and incorporate.
Crispy bacon, break it into small pieces and add it to the pan with the onion and tomatoes just before serving.
Add the ricotta cheese to the toasted bread, followed by the skillet mixture.
In a skillet over medium heat add a drizzle of olive oil. When hot add the sliced onion. Stir continuously until caramelized, adding splashes of water from time to time so it doesn't stick.
When the onion is soft and caramel-colored, add the tomato jam and integrate the mixture.
Add salt, pepper and broken chile to taste.
Toast the bread with butter (or bacon fat)
Garnish with dried chives. Serve and enjoy!
