Green Spaghetti with poblano pepper cream and roasted garlic
Ingredients:
4 poblano chiles
1 head of garlic
2 Cups of whipping cream
Olive oil Salt and pepper to taste

Instructions:
Cut a lid from the head of garlic and wrap it in aluminum with oil and salt to be able to roast at 400 F/204.4 C for 25/30 mins.
Add oil to the chiles so that they are well covered
Remove the shell, veins and seeds.
Boil your pasta in previously salted water and reserve a little water before straining it.
Add the sauce to the pasta and if necessary to adjust the consistency you can add a little of the pasta water.
Tate the chiles to your preference, I did it in the oven at 475 F/246.1 C checking every 5 minutes to turn it and that they were golden from all angles.
When they are well roasted, put them in a bag or cover them with plastic and let them sweat.
Add the chiles, garlic, cream to a blender and season with salt and pepper.
Serve hot, creamy and ready, you can enjoy it now!
